Producer: the history of the De Palma farm began about 15 years ago on the low hills north of Bari, between the countryside of Modugno and Palo del Colle, when Mario, who was not a farmer, began to invest in land. Now the farm covers about 65 hectares of which 42 are cultivated with olive trees and the rest produce almonds, the other leading product of the company. Professionally managed by a family of strong enthusiasts in olive growing, thid Organic farm has achieved success and recognition thanks to a highly innovative vision.
Harvesting: mechanical between October and November, the olives are pressed within 24 hours.
Extraction: extracted on a Mori" mill that allows a controlled temperature processing between 19 ° and 20 °, together with the vacuum technology, an oxygen management at the beginning of the kneading which favors the lipoxygenase and therefore the formation of the aromas in the best possible way. The whole process is completed within 15 to 20 minutes, in order to guarantee the least possible stress to the produce.
Single Variety Coratina: featured in the famous guide "Flos Olei" and in the guide "Oli d'Italia 2018" by Gambero Rosso is a beautiful golden yellow color with slight shades of green. It is a fruity intact: a limpid color is associated with a full and enveloping fragrance, with balsamic tones of mint and rosemary and clean tones of almond, cinnamon and black pepper. The taste is of a strong plant character (artichoke, lettuce, wild thistle and chicory), powerful bitter and spicy.
Serving suggestions: aged cheeses, bean soups, red meats, artichoke salad, bruschetta with tomato.
Single Variety Peranzana: a light and delicate oil, this one, of a deep green color. Medium green fruity enriched with hints of fresh almonds, dried fruit, tomato and artichokes. The scent is elegant, while the taste is refined, sweet to the appearance, which becomes intense and persistent, slightly bitter and of a spicy volatile.
